Cucumbers are a versatile vegetable, that can be prepared and eaten, or used in many different ways. There are also varieties of cucumbers, that are used differently. The smaller ones are used for making pickles. The larger, and longer and smoother skinned cucumbers are used for salads, but also can be enjoyed just eating them as is, either sliced, diced, or just holding them and biting into them. They can be taken to picnics or beaches, as they do not spoil in the heat. Add olives to a cucumber, tomato salad, and perhaps anchovies, for more of a Greek salad, of course adding Feta Cheese to make it more authentic. Remember to not remove the skin when making pickles.
